I do that sometimes but it’s not traditional chicken soup. For chicken soup the liquid should be clear and the chicken should be lightly poached.
That is certainly true, but I’m way too lazy to make stock from scratch. I don’t even own a sieve. The mediocre chardonnay used to deglaze the pot at the end of the soffrito made for some tasty liquid.
